Speedy Tex-Mex Recipes

It's no secret that I love Tex-Mex food.  Here are some of my favorite recipes for Cinco de Mayo or anytime you want fun food that makes your taste buds say, "Ole!"

A great fresh taste for entertaining or for an easy family meal.

Turn Jarred Salsa Fabulous with Add-Ins
Choose some of these add-ins for a quick cheat on home-made salsa. 

The Best Guacamole in the World
My daughter-in-law's recipe that sends me to nirvana.  It's pretty simple, actually, but it seems to be the perfect combination.

Slow Cooker Chicken Taco Soup
Throw it in the crockpot in the morning and come home to a great meal!

A Fresh Take on 7 Layer Taco Dip  (See photo above.)
A great appetizer to feed a crowd.  I like this way of making it to increase the amount of fresh veggies--yum.

Salsa with Shrimp
This is the easiest recipe ever.  Just add chilled cooked shrimp (thawed frozen is fine) of any size to your favorite jarred salsa.  I like to add a can of drained corn and a can of rinsed and drained black beans to it.  Mix and serve with tortilla chips.  Chill all ingredients before mixing for best taste.  This serves like an appetizer, but can also be a meal.  Keep it in mind for those nights when you are too tired to cook!  It's a lot healthier than something from a fast food restaurant & you can keep all the ingredients on hand. 

Margarita Pie
This is probably not authentic Mexican food, but it's a great frozen dessert with the alcohol still in it.

So happy Cinco de Mayo!  Serve your favorite margaritas or cerveza!  Lemonade is great too.  By the way, Cindo de Mayo is May 5th, but feel free to make it a Cinco de Mayo weekend.
